Taking a bite of a curry puff is simple, one bite and goes inside the stomach. I took it for granted until I visited a nyonya kueh maker’s kitchen. There the whole family was involved in the making this simple delicacy and only realize that the process is really time consuming.
Peeling potato is definitely a boring job but to them is all in a days work

Ingenious way to get a bucket of coarse mashed potato

Meanwhile, in another part of the kitchen the pastry is being prepared.
The dough is pinch into small lump
Each lump is thrown into the machine to flatten and roll up like a cigar
Again flatten manually using a roller pin. The reason to have them roll up in this shape is to ensure that there in a ring pattern at the centre of the puff
Everybody is involve - old and young
Time for the yummy delicious filling
A quick and precise twist at the base by the father in law makes the curry puff looks like a small coin purse.
All wrapped up and waiting to be fried
So the next time before biting into your delicious puffy purse shape pastry, have a thought as to how much work has to be put in. Small it seem but the work to prepare them out is indeed not easy.
